1

Rinse the red lentils under cold water until the water runs clear, then drain well.

2

Put the lentils and 700 ml water in a medium saucepan. Bring to a boil, then reduce the heat to low and simmer uncovered for 15–18 minutes, until the lentils have completely collapsed into a thick porridge. Stir occasionally so they do not catch.

3

Take the pan off the heat, add the fine bulgur and stir once. Cover with a lid and let it stand for 15 minutes so the bulgur absorbs the remaining liquid and swells.

4

While the bulgur steams, heat 2 tbsp olive oil in a small frying pan over medium heat. Add the onion and cook for 5–6 minutes until soft and translucent, not browned. Add the tomato paste, red pepper paste, cumin, isot pepper, salt and black pepper and fry for 1 minute until the paste darkens slightly and smells sweet.

5

Scrape the onion and paste mixture into the lentil-bulgur pan and knead everything together with a sturdy spoon or your hand for 3–4 minutes. The mixture should become a smooth, slightly sticky dough that holds together when squeezed. If it is too dry, add 1–2 tbsp warm water; if too wet, add 1 tbsp fine bulgur and rest 5 minutes.

6

Fold in the spring onions, parsley and mint with the remaining 1 tbsp olive oil. Taste and adjust salt and isot pepper.

7

With wet hands, take walnut-sized pieces of the mixture (about 25 g each) and roll into 5 cm long oval köfte, pressing gently so they hold their shape. Wet your hands every few pieces to stop the mixture sticking.

8

Arrange the köfte on a platter and serve at room temperature with lettuce leaves and lemon wedges. To eat, squeeze lemon over a köfte, wrap it in a lettuce leaf and eat with your hand.

Kitchen notes

Kitchen notes

  • The most common mistake is not cooking the lentils long enough: they must be a fully collapsed porridge before the bulgur goes in, otherwise the köfte stay grainy and fall apart.
  • Kneading is what makes the texture: 3-4 minutes of vigorous mixing develops the starch and gives the köfte their characteristic springy bite. If the mixture crumbles, it needs more kneading, not more water.
  • Let the mixture cool to room temperature before shaping. Warm mixture is sticky and the köfte slump; cooled mixture rolls into neat ovals.
  • Do not boil the bulgur: it only needs the residual heat of the lentils. Boiling makes the köfte gluey.
  • Taste after the herbs go in, not before: the raw onion and lemon at serving shift the seasoning.

Substitutions

  • fine bulgur→coarse bulgur pulsed 3-4 times in a food processor (texture will be slightly more rustic)
  • red pepper paste→1 tbsp tomato paste plus 1/2 tsp sweet paprika and a pinch of cayenne
  • isot pepper→sweet paprika with a small pinch of cayenne
  • fresh mint→1 tsp dried mint
  • olive oil→sunflower oil

Storage & reheating

Keep the shaped köfte in a covered container in the fridge for up to 3 days; the flavour improves after a few hours. They do not freeze well because the bulgur turns mushy on thawing. Serve cold or at room temperature, never reheated in a pan; if you want them slightly warm, let them sit at room temperature for 20 minutes before serving. Keep the lettuce and lemon separate until serving so the leaves stay crisp.

FAQ

The questions we get asked most

Why did my mercimek köftesi fall apart?

The lentils were probably not cooked long enough or the mixture was not kneaded enough. The lentils must break down into a thick porridge before the bulgur is added, and the mixture needs 3-4 minutes of vigorous kneading to become sticky and cohesive. If it still crumbles, knead in 1-2 tbsp warm water and rest for 10 minutes.

Can I make mercimek köftesi ahead of time?

Yes. The mixture can be made up to 1 day ahead and kept covered in the fridge; bring it to room temperature for 30 minutes before shaping, as cold mixture cracks. Shaped köfte can be refrigerated for up to 3 days in a covered container.

How do I know when the red lentils are cooked enough?

They should be completely collapsed with no visible whole lentils, resembling a thick porridge that holds a trail behind the spoon. This takes 15-18 minutes of gentle simmering. If there is still loose water, simmer 2-3 minutes more before adding the bulgur.

Can I use a different bulgur if I cannot find fine bulgur?

Yes, but texture changes. Coarse bulgur works if you pulse it 3-4 times in a food processor to break it down; otherwise the köfte will be chewier and less smooth. Do not substitute couscous, which does not bind the same way.

Why are my köfte mushy or wet?

Too much water remained when the bulgur went in, or the bulgur was boiled instead of steamed off the heat. Next time drain any excess liquid after cooking the lentils, and let the bulgur absorb only the residual heat for 15 minutes. If the mixture is already wet, knead in 1-2 tbsp fine bulgur and rest 10 minutes.

Is mercimek köftesi served hot or cold?

It is a room-temperature or cold mezze, never served hot. Chilling for at least 1 hour firms the köfte and lets the cumin and isot pepper mellow. Serve with lemon wedges and lettuce leaves; the lemon is squeezed over just before eating.

Can I freeze mercimek köftesi?

Freezing is not recommended. The bulgur absorbs moisture as it thaws and the köfte become soft and pasty. If you must, freeze the unshaped mixture for up to 1 month, thaw overnight in the fridge, then knead in 1 tbsp fine bulgur before shaping.
