Peel the 2 cucumbers, cut them in half lengthwise and scrape out the seeds with a spoon. Chop the flesh roughly — removing the seeds keeps the cooler from turning bitter.
Add the chopped cucumber, 80 ml fresh lime juice, 3 tbsp honey, 10 mint leaves and a pinch of salt to a blender.
Pour in 400 ml cold water and blend on high for 45 to 60 seconds until the mixture is completely smooth and pale green.
Set a fine-mesh sieve over a jug and strain the blended liquid, pressing the solids with the back of a spoon to extract all the juice. Discard the pulp.
Taste and adjust: add a little more honey if it is too tart, or a squeeze more lime juice if it is too sweet.
Fill 4 tall glasses with 12 ice cubes in total, pour the cooler over the ice and garnish with lime wheels and extra mint sprigs. Serve immediately.

Kitchen notes
Kitchen notes
- The most common mistake is blending cucumbers with their seeds and skin — both turn the drink bitter and watery. Peel and deseed before blending.
- Strain through a fine-mesh sieve, not a colander; the pulp is what makes the cooler cloudy and thick rather than crisp and clean.
- Chill the glasses in the freezer for 5 minutes before serving so the ice melts more slowly and the drink does not dilute.
- If your limes are small, measure the juice rather than counting fruit — 80 ml is the target, and under-juicing makes the cooler taste flat.
Substitutions
- honey→maple syrup or agave syrup for a vegan version
- fresh mint leaves→fresh basil leaves for a slightly different herbal note
- cold water→sparkling water for a fizzy version, added after straining
Storage & reheating
Store the strained cooler without ice in a sealed jar or bottle in the fridge for up to 3 days; shake or stir before serving since it separates. Do not store it with ice, as it will water down. For a slushy texture, freeze the strained liquid in ice-cube trays for up to 1 month and blend the frozen cubes with a splash of cold water before serving.
FAQ
The questions we get asked most
Why did my cucumber lime cooler turn bitter?
Bitterness almost always comes from the cucumber skin and seeds, or from blending too long and extracting compounds from the peel. Peel the cucumbers fully, scrape out the seeds with a spoon, and blend for no more than 1 minute. A pinch of salt also helps mask mild bitterness.
Can I make this cooler ahead of time?
Yes. Blend and strain it up to 24 hours ahead, then keep it covered in the fridge in a sealed jar. Add the ice and garnishes only at serving time, because the drink separates slightly and the mint darkens after a day.
How long does cucumber lime cooler last in the fridge?
Stored without ice in a sealed container, it keeps for up to 3 days. Stir or shake before each serving. After 3 days the cucumber flavor fades and it starts to taste flat, so it is best drunk within 48 hours.
Can I freeze this cucumber lime cooler?
Yes. Pour the strained liquid into ice-cube trays and freeze for up to 1 month. To serve, blend 8 to 10 frozen cubes with 60 ml cold water per glass until slushy. This is a good way to avoid a watered-down drink.
Can I use a regular blender instead of a high-speed one?
Yes, but blend in two batches so the blender is not overloaded, and run it for a full 60 seconds. If small pieces of cucumber remain, strain twice through a fine-mesh sieve. A high-speed blender simply gives a smoother result faster.
How do I make this cooler vegan?
Replace the honey with an equal amount of maple syrup or agave syrup. Both dissolve easily in the blender and keep the drink vegan without changing the texture. Taste after blending, since maple syrup is slightly less sweet than honey.
Why is my cooler watery instead of crisp?
Too much ice or water dilutes it. Use exactly 400 ml cold water and 12 ice cubes for 4 servings, and chill the glasses beforehand. Also make sure the cucumbers are firm and fresh — soft cucumbers release more water and less flavor.
