Process

1

Preheat the oven to 200°C. Line a baking tray with parchment paper.

2

Pat the drained chickpeas dry with a clean towel, then spread them on the tray. Drizzle with 1 tbsp olive oil, sprinkle with the ground cumin, smoked paprika, dried oregano, 0.5 tsp salt and the black pepper. Toss to coat evenly.

3

Roast the chickpeas for 20–25 minutes, shaking the tray halfway, until golden and crisp at the edges.

4

Meanwhile, put the couscous in a heatproof bowl. Pour over 250 ml boiling water, cover tightly and let stand for 5 minutes. Fluff with a fork and season with a pinch of salt.

5

In a small bowl, whisk the lemon juice, minced garlic, remaining 3 tbsp olive oil and a pinch of salt into a dressing.

6

In a large bowl, combine the halved cherry tomatoes, diced cucumber, sliced red onion and kalamata olives.

7

Add the fluffed couscous and roasted chickpeas to the vegetables. Pour over the lemon dressing and toss gently to combine.

8

Divide among bowls, top with crumbled feta cheese and chopped fresh parsley, and serve.

Kitchen notes

Kitchen notes

  • The most common mistake is not drying the chickpeas before roasting; excess moisture steams them and they never crisp. Pat them thoroughly with a towel.
  • Couscous needs exactly 5 minutes of covered steaming; stirring it early makes it gluey. Always fluff with a fork, never a spoon.
  • Dress the bowl just before serving. If you plan to eat it later, keep the dressing separate so the vegetables stay crunchy.
  • For extra texture, toast the couscous in 1 tbsp olive oil for 2 minutes before adding water, then proceed as written.

Substitutions

  • couscous→quinoa or bulgur wheat (cook according to package directions)
  • feta cheese→crumbled goat cheese or omit for a dairy-free version
  • kalamata olives→green olives or capers
  • fresh parsley→fresh mint or cilantro

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep the feta and parsley separate if possible. To reheat, spread the chickpea and couscous mixture on a microwave-safe plate and heat on medium power for 1-2 minutes, or enjoy it cold straight from the fridge. Do not freeze; the cucumber and tomatoes become mushy.

FAQ

The questions we get asked most

Why are my roasted chickpeas still soft?

They were likely not dried well enough before roasting, or the oven was not hot enough. Pat them completely dry, toss with oil and spices, and roast at 200°C for at least 20 minutes, shaking the tray halfway. They crisp further as they cool.

Can I use dried chickpeas instead of canned?

Yes. Soak 200 g dried chickpeas overnight, drain, then simmer in fresh water for 60-90 minutes until tender. Drain well and pat dry before roasting. This yields roughly the same amount as two 400 g cans.

How do I keep the couscous from turning mushy?

Use a 1:1.25 ratio of couscous to boiling water by volume, cover immediately and let it stand for exactly 5 minutes without stirring. Then fluff with a fork. If it still feels wet, spread it on a tray for a few minutes to dry.

Can I make this bowl ahead of time?

You can roast the chickpeas and cook the couscous up to 2 days ahead and refrigerate them separately. Chop the vegetables and make the dressing up to 1 day ahead. Assemble just before serving so the cucumber and tomatoes stay crisp.

Is this recipe gluten-free?

Not as written because couscous is made from wheat. To make it gluten-free, replace the couscous with cooked quinoa or gluten-free bulgur and check that all packaged ingredients are certified gluten-free.

Can I add protein like chicken or fish?

Yes. Grilled chicken breast, lamb meatballs or seared salmon fillet all work well. Add about 150 g cooked protein per serving on top of the bowl. Adjust the salt in the dressing since the added protein may be seasoned.

How do I know when the chickpeas are done roasting?

They should be golden brown at the edges and rattle slightly when you shake the tray. A chickpea taken from the edge should be crisp on the outside and still slightly tender inside. If they are pale, roast 5 more minutes.
