Preheat oven to 200°C. Line a baking sheet with parchment paper.
Drain and rinse the canned chickpeas. Spread them on a clean kitchen towel and pat thoroughly dry. Remove any loose skins.
In a bowl, toss the dried chickpeas with olive oil, smoked paprika, ground cumin, garlic powder, salt, black pepper, and cayenne pepper (if using) until evenly coated.
Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Do not overcrowd.
Roast for 25–30 minutes, shaking the pan halfway through, until golden brown and crispy. They will continue to crisp as they cool.
Let cool on the baking sheet for 5 minutes before serving. Serve warm or at room temperature.

Kitchen notes
Kitchen notes
- The most common mistake is not drying the chickpeas well; any moisture will steam them instead of roasting, resulting in chewy rather than crispy chickpeas.
- For even crispiness, remove any loose skins that come off during drying; these can burn.
- Oven temperatures vary; start checking at 25 minutes. They are done when they are golden and make a rattling sound when shaken.
Substitutions
- smoked paprika→sweet paprika + a pinch of smoked salt
- olive oil→any neutral oil like avocado or canola
- canned chickpeas→cooked dried chickpeas (about 250g dried, cooked)
Storage & reheating
Store cooled roasted chickpeas in an airtight container at room temperature for up to 3 days. They will lose crispness over time; to re-crisp, spread on a baking sheet and warm in a 180°C oven for 5-7 minutes. Do not refrigerate as they become soggy.
FAQ
The questions we get asked most
Why are my roasted chickpeas still soft?
They likely were not dried thoroughly or were overcrowded on the pan. Any moisture creates steam, preventing crisping. Ensure they are patted very dry and spread in a single layer with space between them.
Can I use dried chickpeas instead of canned?
Yes, but you must cook them first. Soak 250g dried chickpeas overnight, then boil until tender (about 1-1.5 hours). Drain and dry well before roasting. Canned is quicker and works perfectly.
How do I make them extra crunchy?
After rinsing, rub the chickpeas in a towel to remove skins, then let them air-dry for 15 minutes. Toss with oil and spices, and roast at 200°C, shaking occasionally. For maximum crunch, roast a few minutes longer, but watch for burning.
Can I add different spices?
Absolutely. Try curry powder, chili powder, or za'atar. Adjust salt accordingly. Add spices before roasting for best flavor infusion.
How long do they stay crispy?
They are best the day they are made. Stored in an airtight container at room temperature, they stay crispy for about 2 days, then gradually soften. Re-crisp in a 180°C oven for 5 minutes.
Can I freeze roasted chickpeas?
Freezing is not recommended as they become mushy upon thawing. If you must, freeze in a single layer, then re-crisp in the oven, but texture will be compromised.
