1

Rinse the basmati rice under cold running water until the water runs clear, then soak it in fresh cold water for 20 minutes. Drain well and set aside.

2

Warm 25 g of the ghee in a heavy saucepan over medium heat. Add the chopped yellow onion and cook for 6 to 8 minutes, stirring often, until soft and pale golden.

3

Stir the ground cinnamon, ground cardamom and ground cumin into the onions and cook for 30 seconds, just until fragrant. Do not let the spices brown or they turn bitter.

4

Pour in the date syrup and 450 ml water, add the fine salt and the orange zest if using, and bring to a gentle boil, stirring so the syrup dissolves completely.

5

Add the drained rice, stir once, and let the liquid return to a simmer. Cover tightly, lower the heat to low, and cook for 15 minutes without lifting the lid.

6

Remove the pan from the heat and rest it covered for 10 minutes so the grains finish steaming and firm up.

7

Uncover, fluff the rice gently with a fork, dot with the remaining 15 g ghee and scatter over the toasted almonds before serving.

Kitchen notes

Kitchen notes

  • The most common mistake is adding the date syrup without tasting it: brands vary a lot in sweetness and thickness. If yours is very thick, reduce it to 80 ml and add 2 extra tbsp water so the rice does not turn sticky.
  • Do not stir the rice after the liquid comes to a boil. Stirring releases starch and makes muhammar gluey; one stir when the rice goes in is enough.
  • The rice is done when the grains are tender but still separate and all the liquid has been absorbed. If there is still liquid at 15 minutes, cook uncovered on low for 3 to 4 minutes more.
  • A heavy-bottomed pan matters here because the syrup sinks and scorches easily. If you only have a thin pan, set it on a flat griddle over low heat.

Substitutions

  • date syrup→honey or molasses mixed with 1 tbsp water
  • ghee→unsalted butter or a neutral oil for a dairy-free version
  • basmati rice→jasmine rice, though it will be slightly softer
  • toasted almonds→toasted pistachios or raisins

Storage & reheating

Cool leftovers within 1 hour and store in an airtight container in the fridge for up to 3 days. Reheat in a covered pan over low heat with 1 to 2 tbsp water, or in a covered microwave-safe bowl on high for 60 to 90 seconds per portion, until steaming. Muhammar does not freeze well because the syrup makes the grains mushy on thawing, so freeze only if necessary, for up to 1 month, and reheat straight from frozen in a covered pan.

FAQ

The questions we get asked most

Why did my muhammar turn out sticky and clumpy?

Sticky rice usually means too much liquid, too much date syrup, or stirring during cooking. Use the measured 450 ml water, stir only once when the rice goes in, and rest the covered pan off the heat for 10 minutes. If your date syrup is very thick, cut it to 80 ml and add 2 tbsp water.

Can I make muhammar ahead of time for a gathering?

Yes. Cook it fully, cool it within an hour, and refrigerate in an airtight container for up to 3 days. Reheat in a covered pan over low heat with a splash of water, or microwave covered for 60 to 90 seconds per portion. Fluff with a fork and add the ghee and almonds just before serving.

How do I know when the rice is fully cooked?

At 15 minutes the liquid should be absorbed and the grains tender with a slight bite. Tip the pan: if no liquid pools at the edge, it is done. If liquid remains, cook uncovered on low for 3 to 4 minutes, then rest covered for 10 minutes before fluffing.

Can I use honey instead of date syrup?

Yes, honey works, but it is sweeter and thinner, so start with 80 ml and taste the cooking liquid before adding the rice. Molasses is a closer match in color but more bitter, so blend 60 ml molasses with 30 ml honey. The finished dish should be lightly sweet, not dessert-sweet.

Why did the bottom of my pot burn?

Date syrup is dense and sinks, so it scorches on thin pans or high heat. Use a heavy saucepan, keep the heat on low once the rice is covered, and never cook it longer than the recipe states. If you smell scorching, move the rice to a fresh pot without scraping the bottom layer.

Is muhammar supposed to be served hot or at room temperature?

It is best served warm, right after the 10-minute rest, when the ghee melts into the grains. It also holds well at room temperature for about 2 hours on a buffet. Avoid serving it cold from the fridge, as the syrup firms up and the rice tastes flat.

Can I add meat or vegetables to make it a main dish?

Yes. Browned chicken thighs or lamb chunks can be added back into the pan with the water in step 4 and cooked until tender before the rice goes in. For a vegetable version, stir in roasted carrots or pumpkin at the end so they do not break down.
