1

Cut 800 g chilled watermelon into 2 cm cubes and spread them on a plate lined with paper towels. Pat the top dry and leave for 5 minutes while you prep the rest.

2

Peel 1 cucumber, halve it lengthwise, scoop out the watery seeds with a spoon, and slice the flesh 5 mm thick.

3

Slice 0.5 red onion paper-thin and soak the slices in ice-cold water for 5 minutes, then drain and pat dry to tame the raw bite.

4

In a small bowl whisk 2 tbsp olive oil, the zest of 1 lime and 2 tbsp lime juice until slightly thickened.

5

In a wide shallow bowl, layer the watermelon, cucumber and red onion. Scatter over 150 g cubed feta and 10 g torn mint leaves.

6

Drizzle the lime dressing over the salad, then finish with 0.25 tsp flaky sea salt, 0.25 tsp cracked black pepper and 20 g chopped pistachios if using. Serve immediately.

Kitchen notes

Kitchen notes

  • The one mistake most people make is salting the watermelon too early. Salt draws out water within minutes, so add the flaky sea salt and dressing only right before serving, never in advance.
  • Drain the watermelon well and pat it dry. Dry fruit means the dressing clings instead of pooling at the bottom of the bowl.
  • Use a block of feta in brine rather than pre-crumbled feta. Crumbled feta is dry and dusty; a block cut into cubes stays creamy and holds its shape against the juicy melon.
  • Chill everything, including the bowl, before assembling. This salad is at its best when the melon is fridge-cold and the feta is just out of the fridge.

Substitutions

  • feta cheese→halloumi, sliced and briefly pan-seared, or a firm goat cheese
  • lime→lemon, using the same amount of zest and juice
  • fresh mint→fresh basil or a mix of mint and basil
  • pistachios→toasted pumpkin seeds for a nut-free version
  • red onion→2 thinly sliced spring onions

Storage & reheating

This salad is best eaten within 30 minutes of dressing. If you must store it, keep the watermelon, cucumber and onion in one airtight container and the feta, mint and dressing separately in the fridge for up to 24 hours; the watermelon releases water and softens after that. Assemble just before serving. Do not freeze any part of this salad, as watermelon turns mushy and grainy once thawed.

FAQ

The questions we get asked most

Why is my watermelon feta salad watery?

Salt and acid pull water out of the watermelon and cucumber within minutes. Pat the cubed watermelon dry, scoop the seeds out of the cucumber, and add the lime dressing and flaky salt only at the moment of serving. If you are making it ahead, layer the undressed components in a colander set over a bowl so any liquid drains away.

Can I make watermelon feta salad ahead of time?

You can prep the parts up to 24 hours ahead: cube the watermelon and keep it covered in the fridge, slice the cucumber and onion and store them separately, and whisk the lime dressing in a jar. Toss everything together no more than 10 minutes before serving, because the salad loses its crisp texture once dressed.

How do I stop the red onion from tasting too harsh?

Soak the paper-thin slices in ice-cold water for 5 minutes, then drain and pat them dry. The cold water rinses away some of the sulfur compounds that cause the sharp burn, leaving a milder crunch that does not overpower the sweet melon. A squeeze of lime over the slices works too.

Can I use pre-crumbled feta instead of a block?

You can, but the texture suffers. Pre-crumbled feta is coated in starch and is much drier, so it turns grainy against the juicy watermelon. A block of feta packed in brine, cut into 1.5 cm cubes, gives creamy pockets that contrast better with the fruit.

Is watermelon feta salad safe for someone with a dairy allergy?

No, feta is a dairy product. For a dairy-free version, leave the feta out entirely or use a firm plant-based feta alternative, and check that it is made without milk proteins. The rest of the salad, including the lime dressing and pistachios, is naturally dairy-free.

What can I serve with watermelon feta salad?

It works as a side for grilled chicken, lamb kofta, or grilled fish, and it is a common part of a mezze spread with hummus, flatbread and olives. Because it is juicy and salty, it also pairs well with simply grilled halloumi or a grain like bulgur.

How do I know if the watermelon is sweet enough?

Look for a melon that feels heavy for its size and has a deep hollow thud when tapped. If the cubes taste bland, sprinkle a pinch of flaky salt over them and let them sit for 2 minutes; salt suppresses bitterness and makes the fruit taste sweeter without adding sugar.
