Rinse the cucumbers and pat them dry. Trim the ends, then lay each cucumber on a cutting board and press down firmly with the flat side of a cleaver or the bottom of a heavy pan until it splits open along its length.
Pull the split cucumbers apart with your hands into rough 3–4 cm chunks, letting the jagged edges and exposed seeds stay intact. Discard any pieces that are mushy or overly seedy.
Put the cucumber chunks in a colander set over a bowl, sprinkle with the 4 g salt, toss once, and let them drain at room temperature for 10 minutes. Do not skip this: the salt pulls out the water that would otherwise dilute the dressing.
While the cucumbers drain, whisk the black vinegar, soy sauce, toasted sesame oil, sugar, garlic, and chili oil (if using) in a small bowl until the sugar dissolves completely.
Shake the colander and gently press the cucumbers with a clean kitchen towel or your hands to remove the released liquid. Transfer them to a serving bowl.
Pour the dressing over the cucumbers and toss with your hands or two spoons so the rough surfaces catch the garlic and chili flakes. Scatter the toasted sesame seeds on top.
Chill in the fridge for 10 minutes before serving, or serve immediately if you prefer the crunch at its loudest. Toss once more right before it goes to the table.

Kitchen notes
Kitchen notes
- The one mistake most people make is slicing the cucumbers neatly instead of smashing them. The cracks and rough edges are what hold the dressing; smooth slices let it slide off and the salad tastes flat.
- Salting and draining for 10 minutes is the difference between a crunchy salad and a watery bowl. If you skip it, the cucumbers release water into the dressing within minutes and the flavor turns thin.
- Use cucumbers straight from the fridge and keep the dressing cold. Warm cucumbers go limp fast, and this salad has no cooking step to firm them back up.
- If your black vinegar is very sharp, start with 1.5 tbsp and taste before adding the rest. The dressing should be tart but balanced by the sugar, not bracing.
Substitutions
- black vinegar→rice vinegar plus a splash of balsamic for color
- toasted sesame oil→a neutral oil with 1 tsp toasted sesame seeds crushed in
- chili oil→a pinch of red pepper flakes warmed in the sesame oil
- Persian cucumbers→English cucumbers, or regular cucumbers with the seeds scooped out
Storage & reheating
Store in an airtight container in the fridge for up to 2 days. The cucumbers will keep releasing liquid, so drain off any pooled dressing before serving and toss with a fresh splash of black vinegar and sesame oil to wake it up. Do not freeze: the ice crystals destroy the crunch and the cucumbers turn to mush. This salad is best eaten the day it is made, ideally within 4 hours.
FAQ
The questions we get asked most
Why did my smashed cucumber salad turn watery?
The cucumbers were not salted and drained long enough. Salting for 10 minutes pulls out the excess water so the dressing clings instead of pooling. If you are short on time, salt them for 5 minutes and press them firmly in a clean towel before dressing.
Can I make smashed cucumber salad ahead of time?
You can smash, salt, and drain the cucumbers up to 4 hours ahead and keep them covered in the fridge. Whisk the dressing separately and combine just before serving. Once dressed, the salad is at its best within 2 hours.
What can I use instead of black vinegar?
Rice vinegar is the closest easy swap, though it is sharper and less malty. Use the same amount and add an extra pinch of sugar. A 50/50 mix of rice vinegar and balsamic also mimics the dark color and mild sweetness of Chinkiang vinegar.
How do I make it less spicy?
Leave out the chili oil entirely or use just a quarter teaspoon. The garlic and black vinegar still carry the dish. If you want the look of chili without the heat, add a few toasted sesame seeds and a drizzle of plain sesame oil instead.
Can I use regular cucumbers from the supermarket?
Yes, but peel them if the skin is thick and waxed, and scoop out the watery seed core with a spoon before smashing. Regular cucumbers release more water, so salt them for the full 10 minutes and drain well.
How do I know when the cucumbers have drained enough?
Pick up a piece and squeeze it gently: it should feel firm and slightly springy, not slippery or heavy with water. You should see a visible pool of liquid in the bowl under the colander. If there is barely any liquid, give them 3-4 more minutes.
Can I add other ingredients to this salad?
Yes, it takes well to 1 tsp of toasted sesame paste whisked into the dressing, a handful of shredded carrot, or thin slices of red onion. Add crunchy extras like peanuts or fried shallots just before serving so they stay crisp.
