In a large bowl, combine the semolina flour and all-purpose flour. Add the melted ghee and rub with your fingers until the mixture resembles coarse crumbs. Cover and let rest at room temperature for 30 minutes.

Meanwhile, prepare the filling: in a food processor, pulse the dates, ground cinnamon, ground cardamom, and orange zest until a smooth paste forms. If the dates are too dry, add 1–2 tablespoons of water. Set aside.

After resting, add the orange blossom water and the dissolved active dry yeast to the flour mixture. Knead until a soft, pliable dough forms. If it is too dry, add the milk a little at a time. The dough should not be sticky.

Preheat the oven to 180°C. Lightly grease a baking sheet with ghee.
Take a small piece of dough (about 20 g) and roll it into a ball. Flatten it in your palm, then place about 1 teaspoon of the date filling in the center. Wrap the dough around the filling and seal the edges, forming a smooth ball.
Press the filled ball into a maamoul mold (or use a fork to create a pattern) to shape it. Gently tap the mold to release the cookie onto the prepared baking sheet. Repeat with the remaining dough and filling.
Bake the maamoul for 12–15 minutes, or until the bottoms are lightly golden but the tops are still pale. Do not overbake.
Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Once completely cool, dust generously with powdered sugar. Store in an airtight container.

Kitchen notes
Kitchen notes
- The most common mistake is skipping the 30-minute rest after rubbing ghee into the flour; without it the semolina stays gritty and the cookies crack when you press them into the mold.
- Maamoul are done when the bottoms are lightly golden and the tops are still pale; if the tops brown, they have overbaked and will turn hard and dry once cool.
- If the dough cracks while you press it into the mold, your dough is too dry; work in milk a teaspoon at a time until it holds together without crumbling.
- Do not dust with powdered sugar until the cookies are completely cool, at least 1 hour; sugar applied to warm cookies melts and turns gluey.
Substitutions
- semolina flour→fine semolina (not coarse) or additional all-purpose flour if you cannot find semolina, though the texture will be less crumbly
- ghee→clarified butter or a firm plant-based butter substitute melted and cooled
- orange-blossom water→rose water or 1 teaspoon vanilla extract plus 1 teaspoon finely grated orange zest
- active dry yeast→instant yeast used in the same amount, no need to dissolve first
Storage & reheating
Store cooled maamoul in an airtight tin or lidded container at room temperature for up to 10 days; add a piece of parchment between layers so the sugar does not smear. For longer storage, freeze undusted cookies in a zip-top bag with the air pressed out for up to 3 months, then thaw at room temperature for 2 hours and dust with powdered sugar. To refresh slightly stale cookies, warm them on a baking sheet at 150°C for 5 minutes, cool completely, then re-dust; do not microwave or they turn rubbery.

FAQ
The questions we get asked most
Why did my maamoul dough crack when I pressed it into the mold?
The dough was too dry, usually because the semolina absorbed more ghee than expected or the flour was packed. Work in milk 1 teaspoon at a time until the dough holds together when squeezed, and let it rest 10 more minutes before shaping.
Can I make maamoul dough ahead of time?
Yes, wrap the dough tightly in plastic and refrigerate for up to 2 days; let it sit at room temperature for 30 minutes before shaping so it does not crack. The date filling can also be made up to 5 days ahead and kept covered in the fridge.
How do I know when maamoul are fully baked?
They are ready when the bottoms are lightly golden and the tops remain pale, about 12-15 minutes at 180°C. If you press a cookie gently and it feels firm with no soft give, it is done; overbaking makes them hard once cooled.
Can I use canned date paste instead of whole dates?
Yes, 400 g of ready-made date paste works, but taste it first because it is often sweeter and looser. If it is very soft, mix in 1 tablespoon of fine semolina or ground biscuit crumbs so the filling does not leak out during baking.
Why are my maamoul dry and crumbly after baking?
Dryness comes from overbaking or from not letting the ghee-and-flour mixture rest long enough before adding the liquids. Next time rest the flour and ghee 30 minutes, bake only until the bottoms are pale gold, and cool on the tray for 5 minutes before moving them.
How long do maamoul stay fresh and can I freeze them?
Kept in an airtight container at room temperature they stay fresh for up to 10 days. Freeze them undusted for up to 3 months, thaw at room temperature for 2 hours, then dust with powdered sugar just before serving.
