Poach the chicken: place the chicken breasts in a saucepan, cover with water by 2 cm, add 1 teaspoon kosher salt, and bring to a bare simmer over medium heat. Cook for 15–18 minutes until the internal temperature reaches 74°C. Transfer to a plate and shred with two forks. Reserve 480 ml of the poaching liquid as the chicken broth, or use store-bought.
Preheat the oven to 190°C. Grease a 23x33 cm baking dish with a little butter.
In a large skillet, melt the unsalted butter over medium heat. Add the yellow onion and red bell pepper and cook for 5–6 minutes until softened. Add the garlic and cook for 30 seconds until fragrant.
Sprinkle the all-purpose flour over the vegetables and cook, stirring constantly, for 1 minute to form a light roux.
Slowly whisk in the warmed chicken broth, then the heavy cream. Cook for 3–4 minutes, whisking, until the sauce thickens enough to coat the back of a spoon.
Stir in the diced tomatoes with their juices, diced green chiles, chili powder, ground cumin, dried oregano, 0.5 teaspoon kosher salt, and black pepper. Simmer for 5 minutes, then remove from heat.
Spread 120 ml of the sauce over the bottom of the prepared baking dish. Arrange one third of the corn tortilla quarters over the sauce, overlapping slightly. Top with half of the shredded chicken, then one third of the sauce, then one third of the combined cheddar and Monterey Jack cheeses.
Repeat the layers: one third of the tortillas, the remaining shredded chicken, half of the remaining sauce, and half of the remaining cheeses. Finish with the last of the tortillas, the remaining sauce, and the remaining cheeses.
Bake uncovered for 30–35 minutes, until the sauce is bubbling around the edges and the cheese is melted and lightly golden. If the top browns too quickly, tent loosely with foil.
Let the casserole rest for 10 minutes before serving. Garnish with chopped fresh cilantro if desired.

Kitchen notes
Kitchen notes
- The most common mistake is skipping the rest after baking; cutting too soon makes the layers slide apart. Wait a full 10 minutes so the sauce sets.
- Do not use raw tortillas straight from the package without softening if they are stiff; briefly warming them in a dry skillet makes them pliable and prevents a dry, cracked casserole.
- The sauce should be thick enough to coat a spoon before layering; if it is runny, simmer a few extra minutes, or the casserole will be watery.
- For the best texture, shred the chicken by hand rather than pulsing in a processor; uneven, larger shreds hold the sauce better.
Substitutions
- chicken breasts→boneless, skinless chicken thighs (poach 20-22 minutes)
- heavy cream→whole milk mixed with 1 tablespoon cornstarch
- shredded cheddar cheese→Colby Jack or mild cheddar
- diced green chiles→roasted poblano peppers, peeled and chopped
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 4 days. To freeze, wrap the cooled casserole tightly in plastic wrap and foil, or portion into freezer-safe containers, and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating. Reheat individual portions in the microwave on medium power for 2-3 minutes, or cover the whole casserole with foil and bake at 180°C for 20-25 minutes until heated through. Do not refreeze thawed leftovers.
FAQ
The questions we get asked most
Why is my King Ranch chicken casserole watery?
The sauce was likely too thin before layering, or the tomatoes and chiles were not drained well enough. Simmer the sauce until it coats the back of a spoon, and drain the canned chiles thoroughly. Let the baked casserole rest for 10 minutes so the juices redistribute.
Can I make King Ranch chicken casserole ahead of time?
Yes. Assemble the casserole up to 24 hours in advance, cover, and refrigerate. Add 10-15 minutes to the baking time if baking from cold, or let it sit at room temperature for 30 minutes first. You can also freeze it unbaked for up to 3 months.
How do I know when King Ranch chicken casserole is done?
The sauce should be bubbling around the edges and the cheese fully melted with light golden spots. The internal temperature should reach at least 74°C. If the top is browning too fast, cover with foil.
Can I use flour tortillas instead of corn tortillas?
Yes, but the texture will be softer and more bread-like. Flour tortillas absorb more sauce, so increase the sauce by about 120 ml. Corn tortillas give the traditional flavor and hold up better to the creamy sauce.
Why did my casserole turn out dry?
Dryness usually comes from too little sauce or overbaking. Make sure the sauce is generous and the casserole is covered if the top browns early. Also, do not skip the resting time, which allows the tortillas to absorb moisture evenly.
Can I use rotisserie chicken for this recipe?
Yes, shred about 900 g of rotisserie chicken and skip the poaching step. Use store-bought chicken broth for the sauce. Rotisserie chicken is already seasoned, so taste the sauce before adding the full amount of salt.
How long does King Ranch chicken casserole last in the fridge?
It keeps for up to 4 days in an airtight container in the refrigerator. Reheat portions in the microwave on medium power or in a 180°C oven until steaming hot. Do not leave it at room temperature for more than 2 hours.
